change the expiration date of several members?

We have Dolphin 7.0.9 and I need to set date expires 365 days after of inscription. 

Exist one way to let fixed ?

category is not the correct term here; I think you mean membership instead.  You would need to set up the membership first.  Then changing expiration date is easy.  Log into your admin panel and go to members.  You will see Avatar and beside the avatar a text link.  The text link will take you to the edit form for that member where you can set the membership level and expiration days.

Ok, but how make this to every kind of membership (e.x:  Standard) of one time ?

The easiest way is to run a query on the database.  I don't know of any module that will allow you to set a range of accounts to a particular membership; perhaps someone else can advise you.
