can you create bespoke menu items categories in D7?

i sit poss to create the following menu set up in d7? news as main cat heading then sub headings to be: latest news features etc ect im trying to find my way around d7 and work out what can and cant be done and im finding it a little furstrating to say the least. i dont want to use the standard menu structure i want to create my own. is this poss if so where do i get the info from ? thanks
