The OS doesn't matter so much, as it's a personal choice. If you're unsure, pick CentOS.

Ubuntu and CentOS.  I know many will run Ubuntu on the server but Ubuntu is more of a client system and I say this because Ubuntu will include the "cutting edge" stuff that may not have gone through time tested "hardening".  With a server I want to run that which I know will be rock solid stable and that is why I recommend CentOS.  CentOS is based on RedHat Enterprise distos and is aimed at servers.  For my home computer I would run Ubuntu but for my server I would run CentOS.

OS is very important speaking from a person with data center experience
I would suggest linux over windows anytime...

Centos is good  and proven it nothing more then a redhat copy

Add my vote for the latest Ubuntu "LTS" version (Long Term Support)... it's Ubuntu's production server version and will be supported for five years.  My experience is that once the OS is setup you will not want to upgrade the version except for critical security issues.

I personally would use centos for mission critical stuff and when i want cpanel of course. I prefer ubuntu cuz it is more user friendly with a nice shell but it all comes down to personal preference.

yes, very true.  This is one of those questions where you can ask five people and get five different answers.  The list of OS your hosting company provide will all work well; otherwise they would not list them since it could mean extra support work for them.

All Linux distros are free, they are part of the Lunux open source code base.  The OS itself is not licensed.  I am not sure what you are seeing.  Can you be more specific?

OK, both cPanel and Plesk do carry a license.  Plesk is cheaper I think.  If you want a free server admin interface, there are a few options.

I like Suse.... but, i would never host my own server, not for a production site, trying to make money...
