How to change sex of visitor and admin?

Hello :)

I run a female-based community and wondered a couple of things:

How can I change the sex of the main admin to female?

How can I change any visitor in chat to female instead of the male default?

I have looked at my database and changed some things, but still haven't found where to change others.

I thank you so much for any help you can give!

for visitor replace:
