Getting rid of ampersand in classifieds

Hi, I am starting to modify my classifieds sections to make it more appropriate for trade leads - and I see already that it is going to be a big challenge.  First problem: for space reasons I have used an ampersand character "&" in the category description name - see http://caltrade.com/members/ads

That looks more or less the way I want, but when you add a tradeleade (classified) the secondary category shows the ampersand character as "&" - can anything be done about that?

Second issue - maybe more serious.  I was hoping that the "country" field that shows on the search form would be something that could be added when the tradelead was added - but that is apparently pulled from the country of the poster- is that correct.  So if I enter a tradelead it will show as "United States" no matter what- even if the trade lead is from France?  Can anyone think of what I can do about that?

Another thought on this - at least the second part of my question about having the "country" be the source of the classified, rather than the country of the member.  Could those extra custom fields be used for that?  Is there anyway I could use the "country" predefined list for this?  - i.e. the way you can use #!PredefinedListName in the profile tables?
