How to change the country names (not in lang translations)

I want to change the names of the countries (I want to make it "city" instead of "country").Does anybody know in which file the countries are written?
Particulary I need to sort them not alphabetically, so I need to know in which file are they written!
Any help please!

I'm trying to get the Countries into another profile field, and have them multiple select. Keep getting an sql error= let me know if you have any ideas for that one.
